Italian Tomatoes, Sausage and Spinach over Penne

Oh yes!  One of my favorite dishes!!!  Hoe could I forget about this one?
Pay no attention to the sweet potato in the picture.  It is not an ingredient.  Moving right along…..image Ok let’s get started…..  I use Jimmy Dean Original sausage.  You can use another kind of meat or meatless meat if you like.  Just be sure to season it as it’s cooking with some Italian seasonings if you choose to go a different route.

Start your pasta before you start browning the meat or you’ll be standing around waiting on your pasta to finish cooking. Nobody got time for that!

After your meat is all browned, drain that fat!!!  Just do it…. you’ll thank yourself later 🙂

Add the two cans of tomatoes let that simmer for about 15 minutes.  Then add the WHOLE bag of spinach.  Let that simmer while covered until wilted.

At this time I like to add some Italian seasoning, salt & pepper.  The sausage has a lot of seasoning already so just add with a light hand.  Add a little grated Parmesan cheese at this time too if you like.

 

Ooh la la!  Lookie there!  Remove from the heat and wait for the pasta to finish cooking. Did you know that by placing a wooden spoon over a pot of boiling water prohibits the water from boiling over??

And here it is…. the final product!
Top it with some shredded fresh Parmesan Cheese and you are on your way to a yumfest!!!

Here’s the recipe:

  • 1 lb Jimmy Dean Sausage – original
  • 2 cans petite diced tomatoes
  • 4 cups fresh spinach
  • 1 box penne pasta
  • Italian seasoning
  • salt & pepper
  • Parmesan Cheese
