I went into this Whole30 “thing” with serious trepidation.
My friends said “Ew!, Really? Are you sure you want to do that?”
Black Coffee, No Wine, No Bread, No Pasta? Ew!
Guess what? I LOVE IT!!
Black coffee? Heck no, take some heated unsweetened Almond milk and a tsp of cinnamon, froth it up and add it to your coffee – heaven! Check out the recipe here!
No Wine? Yeah, so what no wine for 30 days won’t kill me. I’ve got a gorgeous bottle of red waiting as a reward. 🙂
No Bread, pasta, etc: I’m fine without that stuff. It’s all fluff to me at this point.
The number on my scale is the motivation to begin.
My energy is the motivation to continue.
My reflection is the motivation to commit.

So much yumminess!!!
I needed something quick.
Something that allowed me to throw together a super yummy, Whole30 approved meal that my family could enjoy too.
It went a little something like this and WOW was it good!! Credits to Sweet C’s Designs!!
I made some rice for the kids and voila, dinner is served.
Oh yes! One of my favorite dishes!!! Hoe could I forget about this one?
Pay no attention to the sweet potato in the picture. It is not an ingredient. Moving right along….. Ok let’s get started….. I use Jimmy Dean Original sausage. You can use another kind of meat or meatless meat if you like. Just be sure to season it as it’s cooking with some Italian seasonings if you choose to go a different route.
Start your pasta before you start browning the meat or you’ll be standing around waiting on your pasta to finish cooking. Nobody got time for that!
After your meat is all browned, drain that fat!!! Just do it…. you’ll thank yourself later 🙂
Add the two cans of tomatoes let that simmer for about 15 minutes. Then add the WHOLE bag of spinach. Let that simmer while covered until wilted.
At this time I like to add some Italian seasoning, salt & pepper. The sausage has a lot of seasoning already so just add with a light hand. Add a little grated Parmesan cheese at this time too if you like.
Ooh la la! Lookie there! Remove from the heat and wait for the pasta to finish cooking. Did you know that by placing a wooden spoon over a pot of boiling water prohibits the water from boiling over??
And here it is…. the final product!
Top it with some shredded fresh Parmesan Cheese and you are on your way to a yumfest!!!
Here’s the recipe:
- 1 lb Jimmy Dean Sausage – original
- 2 cans petite diced tomatoes
- 4 cups fresh spinach
- 1 box penne pasta
- Italian seasoning
- salt & pepper
- Parmesan Cheese

Here’s a Super yummy recipe I found on Cafe Delites Pinterest Board.
This Teriyaki Salmon looks amazingly delicious too from Natasha’s Kitchen.
My recipe you ask? It goes a little something like this:
I like to marinate the fillets (usually 2) in some honey, teriyaki and garlic. Maybe add a squeeze of lemon. Let it sit for at least an hour in the fridge, flipping from time to time, then sear in a hot skillet. Serve it up with some oven roasted asparagus and jasmine rice and LOOK OUT!!
Not only are you getting a meal that is low in fat but your taste buds will be doing a happy dance!!

The Perfect Summer Sangria!!!
Slice (thin slices) one lemon and one lime
Core and slice 6-8 medium to large strawberries
Place sliced fruit into a clear pitcher
Add 1/2 cup rum (any rum will do!) I used Coconut Malibu
Add one bottle of Sauvignon Blanc (if you know me you know I do NOT like Sauvignon Blanc…. “Sauvignon Blah” is what I call it but it works really well with the fruit and rum.)
Put the pitcher with the fruit, rum and wine in the fridge and let it sit for at least 4 hours. I let mine sit overnight.
Just before serving add about 4 cups of Sprite and Voila!!
I like to serve in a small mason jar or stemless wine glass and garnish with fresh mint

The holidays to me are a time for families to come together, to catch up on time lost and, lets face it… To E.A.T. Haha! But isn’t it so true?! Dinners, brunch, cookies exchanges, etc. Basically we say “Y’all come over and let’s eat something!” Channeling Paula Deen here….
Aside from the usual Thanksgiving and Christmas traditions, I’m thinking about a yummy breakfast casserole, overnight french toast, and monkey bread. Don’t these look so delicious!!! Thankful for Pinterest and these peeps for sharing these recipes. I have to say the overnight French toast casserole is so super easy. But so are the others. Go ahead, give’em a try! You won’t be disappointed!
With Thanksgiving on the horizon I find myself drawn to recipes that call for sweet potatoes, pies and oven roasted goodies. My husband and I are hosting Turkey Day this year. Yipee! I am so excited to have the family here in our home. I know that my enthusiasm will fade and stress will take over when we reach T-minus 24 hours. Until then I’m giddy and using all my extra time sprucing up the house.
I cant wait to pull something like this out of our oven….
